Dinnertime in an Assisi Stall
Years ago there were horses munching hay under the stone vaults of that stall but these days, ebullient groups of hungry diners fill the plank tables at La Stalla.
The atmosphere is a “cosy medieval” also due to the blackened walls from the soot and smoke of the kindling used to light the fire in the huge open fireplace. And on the walls, visitors have scrawled their messages of enthusiastic grazie
Anna was at the fireplace the early December night we were there with our friends, Silvana (from Rome) and Frank (from San Rafael, CA), flipping sausages, steaks, ribs and more on the grill:
Grilled scamorza cheeses, potatoes baked in the coals and the Umbrian torta bread flanked the sizzling meats:
Squab was on the grill, too, ordered by our friend, Frank:
But before our secondi, we shared a tasty array of antipasti:
….and then on to the primi. For Silvana, a duo of fettuccine ai funghi and bigoli, a specialty of La Stalla: a sort of elongated gnocchi made with ricotta and spinach.
For Frank, the highlight was his squab!
…..and for Pino, mixed grill:
We shared the mixed vegetables as a side dish…
….and how NOT to taste that Umbrian flatbread, la torta, stuffed with grilled sausages and sautéed wild chicory?
Dessert? Maybe next time…..!
