We just picked our last fava beans for this year and some are now in the freezer.
The other day, the fava beans highlighted a simple tasty, pasta dish, pasta con le fave – the way Peppa makes this dish. And do enjoy the recipe for
Pasta con le Fave
Ingredients
- fresh fava beans, about 2-3 cups
- 1 stalk celery
- 1 small white onion
- tomato sauce, 1 bottle
- olive oil, q. b. (“quanto basta” or “ as much as you need)
- salt, q. b.
- red hot pepper (optional)
- Parmesan cheese, q. b.
Shell fava beans.
Boil salted water and when at rolling boil, drop in the fava beans, cooking til tender to the fork (about 15 mins). Drain fava beans.
Finely-dice white onion and celery:
Saute’ gently (do not burn!) onion and celery in olive oil.
Add fava beans and a bit of hot water. Simmer for about five minutes until fava beans are more tender but still firm.
Add tomato sauce and simmer for about another 10 or 15 minutes or until fave are cooked and tomato sauce thickens a bit. Add salt, q.b and chili pepper if desired.
Cook pasta in boiling salted water and then drain.
Stir in the fava bean sauce.
Sprinkle with Parmesan, q.b, then serve.
