In late January, our Giulia headed with journalist colleague, Sabina, to snowed-in tiny Abruzzo hilltown of Penne, to cover the tragic avalanche in nearby Farindola for EBU (European Broadcasting Union).
The night before they left, Pino cooked up a special dinner of goat’s meat (ours – sigh) and artichokes…..that warmed us all up!
Pino’s one of the most creative cooks I know – and every dish he cooks up is a buonissimo new creation. Here’s how me made the goat:
While the the trimmed artichokes were soaking in water with lemon, he diced finely celery, carrot, garlic, and sautéed all in our olive oil on the wood stove:
He then added the goat meat and bay leaf, covering generously with white wine, then letting the wine evaporate before adding the artichokes:
More gentle simmering til goat meat tender:
What a tasty dinner to warm those two up the night before their departure.

I’m so sorry for the loss of life from the avalanche. What an experience for Giulia to plan and execute. You must be very proud of her. Didn’t know Pino cooked!
