The cheese I’m enjoying for breakfast these days is the result of a Pino project during this coronavirus lockdown: the making of goats’ milk cacioricotta.
I enjoy it in the morning on bread toasted on our woodstove,…
….then topped with our cooked figs:
A perfect way to start off the day – and to ward off even a whisper of a possible CPA (Coronavirus Panic Attack):
Of our twelve goats, eight females have given birth over the past month: a couple kids were born before lockdown and all the others are “lockdown little ones.”
Pino milked one of the mothers not long ago (as he had to bottle-feed her kid who could not initially attach to the udder)….
……and after the kid was satisfied, Pino twice milked her mamma for a couple of liters for us.
…… and what a goat’s milk cheese he made us:
With a cup of tea and good reading to flank the goodness, any day – even one in lockdown – starts off well with a breakfast like this:
And that cacioricotta tops toasted bread slices for crostini for a lunchtime side dish:
And how comforting to see that Pino cheese whenever I open the fridge:
