A Tasty Dinner Before Avalanche-Reporting

In late January, our Giulia headed with journalist colleague, Sabina, to snowed-in tiny Abruzzo hilltown of Penne, to cover the tragic avalanche in nearby Farindola for EBU (European Broadcasting Union).

The night before they left, Pino cooked up a special dinner of goat’s meat (ours – sigh) and artichokes…..that warmed us all up!

Pino’s one of the most creative cooks I know – and every dish he cooks up is a buonissimo new creation. Here’s how me made the goat:

While the the trimmed artichokes were soaking in water with lemon, he diced finely celery, carrot, garlic, and sautéed all in our olive oil on the wood stove:

He then added the goat meat and bay leaf, covering generously with white wine, then letting the wine evaporate before adding the artichokes:
